
Easy Homemade BBQ Chicken Pizza
Equipment
- 1 Pizza pan
- 1 Non-stick cooking spray
- 1 Pastry brush
- 1 Mixing bowl (for tossing chicken)
Ingredients
- 1 Large chicken breast, cooked and shredded
- ⅔ cup (160 ml) BBQ sauce
- ½ cup (75 g) Red onion, thinly sliced
- 1 cup (115 g) Shredded mozzarella cheese
- 1 cup (115 g) Shredded gouda cheese
- ½ cup (8 g) Chopped cilantro
- 1 batch Pizza dough store-bought or homemade
- Olive oil for brushing
Instructions
- Prep the pan : Lightly coat a pizza pan with non-stick spray.
- Shape the dough : Lay the pizza dough on the pan and stretch/spread it out to the edges.
- Add oil and sauce : Brush the dough with olive oil, then brush with some of the BBQ sauce reserving enough sauce to coat the chicken.
- Coat the chicken : Toss the shredded chicken in the remaining BBQ sauce until well coated.
- Layer the cheese : Sprinkle about 2/3 of the mozzarella and gouda over the sauced crust.
- Add toppings : Top with the BBQ chicken and sliced red onion (1/2 cup / 75 g).
- Finish with cheese : Sprinkle the remaining mozzarella and gouda over the top.
- Bake : Bake in a preheated oven at 400°F (200°C) for 12–15 minutes, until the crust is golden and cheese is bubbly.
- Garnish : Remove from the oven and top with chopped cilantro.
Notes
- Rotisserie chicken works great here as a shortcut for the shredded chicken.
- Swap gouda for smoked gouda for extra smoky flavor.
- Add a drizzle of extra BBQ sauce on top before serving for more flavor.
