Make the sauce : In a small saucepan, combine all sauce ingredients except the Parmesan. Cook over medium heat, stirring constantly, until the mixture starts to bubble. Remove from heat and stir in the Parmesan until melted. Let cool before using.
Make the dough : In a stand mixer or large bowl, combine the sugar and warm water. Sprinkle the yeast over the water and let it sit for about 10 minutes until foamy. Add the salt, olive oil, and flour, then mix until a dough forms — it will be sticky! Knead for about 1 minute in a stand mixer, or 2–3 minutes by hand, using as little extra flour as possible. Transfer to an oiled bowl, turn to coat, and cover with a damp towel. Place in a warm spot and let rise for about 1 hour, or until doubled in size.
Assemble the pizza : Preheat the oven to 500°F (260°C). Lightly dust a 16-inch (40 cm) pizza pan with cornmeal to prevent sticking. Without deflating the dough, remove it from the bowl and press it out from the center toward the edges using your fingertips, leaving a slightly raised rim. Spread half of the sauce over the dough, stopping about 3/4 inch (1.9 cm) from the edge. Top with the mozzarella, then add your desired toppings.
Bake : Bake for 7 minutes, or until the crust is golden and the toppings are cooked. Watch closely! The crust can go from perfectly baked to burnt in about a minute.
